Remarkably refreshing, crisp texture and pear-like sweetness from... a root vegetable?? Aptly known as "ground apples," yacon tubers are rich in inulin, a sugar that is indigestible for the human body, meaning all that wonderful sweetness leaves your body with vastly fewer calories than common sweeteners like maple syrup or sugar cane would.

** Please note, due to our website limitations and the size/form of yacon roots, we will ship the best approximate weight to your order. Photo shows a 3.25 LB yacon.

Quick tip for use:

Slice thin raw with vegetable peeler to top on salads. Poach or bake. Peel and juice the tubers, then boil the juice until a thick syrup forms for a unique sweetener that tastes like molasses with hints of charred sweet potato.
